Artificial Intelligence in Health Functional Foods Development

A recent study reveals that consumers have greater trust and confidence in health functional foods (HFF) developed using AI methods compared to conventional human-driven approaches. The research, conducted by Korea University Business School and published in the Food Supplements and Biomaterials for Health journal, highlights the potential of AI to revolutionize the HFF industry.

  • Participants rated AI-developed HFF higher in trustworthiness, expertise, product attitude, and purchase intention
  • AI method scored 5.29 for trustworthiness compared to 4.33 for conventional methods
  • Perceived expertise of AI was 6.12 versus 5.01 for human-driven approaches
  • Consumers showed more positive attitudes towards AI-developed products (5.91 vs 4.65)
  • Purchase intention for AI-developed HFF was higher at 5.17 compared to 4.24 for conventional methods

Impact on the HFF Industry

The study’s results suggest that incorporating AI into HFF development could significantly impact consumer perceptions and purchasing behavior. AI technologies offer consistent and reproducible predictions, potentially reducing errors and variability in the formulation process. This shift towards AI-driven methods could lead to more efficient product development, reduced costs, and increased consumer confidence in the HFF market.

While the study’s findings are promising, the researchers caution that the relatively young participant pool may not represent the general population. Future studies should include a more diverse range of ages, nationalities, and cultural backgrounds to provide a comprehensive understanding of AI’s impact on consumer perceptions in the HFF industry.
